  • 4 tablespoons unsalted butter
  • 1 pound smoked sausage, sliced
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 teaspoons Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 12 ounces penne or rotini pasta
  • Fresh parsley or green onions for garnish

Instructions

  1. Cook the pasta in salted boiling water until al dente, about 8-10 minutes. Drain and set aside.
  2. Brown the sausage in a skillet with melted butter over medium heat for about 5-7 minutes.
  3. Add garlic and cook for 1 minute, making sure it doesn’t burn.
  4. Pour in heavy cream and chicken broth, and bring to a gently simmer.
  5. Mix in Cajun seasoning, smoked paprika, salt, and pepper. Cook for an additional 3-5 minutes until the sauce thickens.
  6. Combine the cooked pasta with the sauce, tossing until evenly coated.
  7. Serve garnished with parsley or green onions.
