A comforting and spicy pasta dish combining tender chicken with creamy buffalo sauce, perfect for weeknight dinners.

  • 8 oz pasta
  • 1 lb chicken breast, diced
  • 1 cup buffalo sauce
  • 1 cup heavy cream
  • 1 cup shredded cheese (e.g., cheddar)
  • 1 cup chicken broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the buffalo sauce, heavy cream, chicken broth, and pasta.
  4. Bring the mixture to a boil, then reduce heat to a simmer and cover.
  5. Cook until the pasta is al dente, about 10-12 minutes, stirring occasionally.
  6. Add shredded cheese until melted and creamy.
  7. Remove from heat, garnish with chopped green onions, and serve warm.

Notes

For a lighter version, substitute half of the heavy cream with Greek yogurt. Whole wheat pasta can be used for added fiber.
