  • 2 chicken breasts, diced
  • 2 tbsp Cajun seasoning
  • 2 cups heavy cream
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil the rotini pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté the chicken in olive oil, seasoning with Cajun spices until cooked through.
  3. Create the creamy base by pouring in the heavy cream and bringing it to a gentle simmer. Stir in mozzarella and Parmesan until melted.
