Ingredients

  • 8 oz pasta (penne or linguine)
  • 1 lb Cajun sausage, sliced
  • 1 lb chicken breast, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tbsp Cajun seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Chopped parsley for garnish

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Brown the sausage until browned, then remove and set aside.
  4. Sauté the chicken, onion, garlic, and bell pepper until the chicken is no longer pink.
  5. Add the Cajun seasoning and stir well.
  6. Pour in the chicken broth and bring to a simmer.
  7. Add the heavy cream and let it thicken slightly.
  8. Combine the cooked pasta with the sauce, sausage, and chicken.
  9. Season with salt and pepper to taste.
  10. Serve hot, garnished with chopped parsley.

Notes

Great served with a crisp green salad or garlic bread for a complete meal. Can be made dairy-free by substituting heavy cream.
