  • 8 oz penne pasta
  • 1 lb Cajun sausage (sliced)
  • 1 tbsp olive oil
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 1 bell pepper (chopped)
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tsp Cajun seasoning
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the sliced Cajun sausage and cook until browned, about 5 minutes.
  3. Stir in the chopped onion, minced garlic, and chopped bell pepper and cook until softened, about 3-4 minutes.
  4. Add the canned diced tomatoes, chicken broth, heavy cream, and Cajun seasoning to the pot and bring to a simmer.
  5. Once simmering, add the penne pasta, stirring gently to submerge it in the sauce.
  6. Cook the pasta until al dente, about 10-12 minutes, stirring occasionally.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.

Notes

For a vegetarian option, substitute sausage with sautéed mushrooms or plant-based sausage.
