  • 1 lb smoked sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 cup heavy cream
  • 2 cups chicken broth
  • 1 tbsp Cajun seasoning
  • Salt and pepper to taste
  • Olive oil
  • Parmesan cheese for serving
  • Chopped parsley for garnish

Instructions

  1. Sauté the sausage: In a large pot, heat a drizzle of olive oil over medium heat. Add the sliced smoked sausage and cook until browned.
  2. Sauté the vegetables: Add the chopped onion and bell pepper. Sauté until soft and fragrant.
  3. Add garlic for flavor: Stir in the minced garlic and cook for another minute.
  4. Combine pasta and sauce ingredients: Add the penne pasta, diced tomatoes, chicken broth, Cajun seasoning, salt, and pepper. Stir to combine.
