Ingredients

  • 2 cups cooked chicken, shredded
  • 1 package (16 oz) gnocchi
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, cooking until soft and fragrant, about 3-5 minutes.
  3. Stir in the shredded cooked chicken and cook for 5 minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Cook the gnocchi according to the package instructions, usually about 2-3 minutes.
  6. Stir in the heavy cream and chopped spinach until the spinach wilts and the soup becomes creamy.
  7. Mix in the grated Parmesan cheese, seasoning with salt and pepper.
  8. Serve immediately in bowls.
