Creamy Crack Chicken Gnocchi

A rich and comforting creamy pasta dish with tender gnocchi and crispy bacon, perfect for weeknight dinners.

Ingredients

  • 1 lb potato gnocchi
  • 2 cups shredded cooked chicken
  • 4 oz cream cheese
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 garlic cloves, minced
  • 4 strips bacon, chopped
  • 2 tbsp chopped parsley
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Bring a pot of salted water to a rolling boil. Gently add the potato gnocchi and cook until they float to the surface, about 2–3 minutes. Once they float, drain them and set aside.
  2. In a skillet, cook the chopped bacon over medium heat until crispy. Once done, remove the bacon and set it aside, but be sure to leave about 1 tablespoon of the grease in the pan.
  3. Add the minced garlic to the skillet with the remaining bacon grease and sauté for about 30 seconds.
  4. Stir in the cream cheese, heavy cream, and chicken broth into the skillet. Whisk until it’s silky and smooth.
  5. Gently stir in your shredded chicken and the gnocchi. Let it all simmer for about 3–4 minutes.
  6. Add in the shredded cheddar cheese and stir until it melts into the creamy sauce.
  7. Top with the crispy bacon and chopped parsley. Add salt and pepper to taste.

Notes

For a speedier option, use rotisserie chicken. Adjust seasoning as preferred.
