Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • Chopped parsley for garnish

Instructions

  1. Boil the potatoes in a pot of salted water until they are tender.
  2. Drain the water and mash the potatoes with the milk, sour cream, and grated Parmesan cheese.
  3. In a skillet, melt the butter over medium heat and add the minced garlic to sauté until fragrant.
  4. Add the shrimp into the skillet and cook until they turn pink, about 2-3 minutes per side.
  5. Pour the heavy cream into the skillet, seasoning with salt and pepper, and simmer until the sauce thickens slightly.
  6. Serve the creamy garlic shrimp generously over the mashed potatoes and garnish with chopped parsley.

Notes

For perfectly creamy mashed potatoes, consider using a ricer or food mill. Don’t overcook the shrimp; they should remain tender and juicy.
