A comforting and creamy gnocchi dish with fresh spinach and feta, perfect for a quick meal.

Ingredients

  • 450g gnocchi
  • 200g fresh spinach
  • 150g feta cheese
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for topping (optional)

Instructions

  1. Cook the gnocchi according to the package instructions until they float. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic, stirring until fragrant.
  3. Add the fresh spinach to the skillet and sauté until wilted.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in crumbled feta cheese until melted.
  5. Add the cooked gnocchi to the skillet and gently mix to coat in the sauce.
  6. Season generously with salt and pepper to taste.
  7. Serve warm, topped with freshly grated Parmesan cheese if desired.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat with a splash of cream to avoid drying out.
