  • 2 tbsp Olive oil
  • 1 cup Cream
  • 2 tbsp Mixed herbs (e.g., thyme, rosemary, parsley)
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 4 Potatoes
  • 4 tbsp Butter
  • 1/2 cup Milk
  • 4 Carrots
  • 2 tbsp Honey
  • 1 tbsp Brown sugar

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken thighs generously with salt, pepper, and mixed herbs. Heat olive oil in a skillet and brown the chicken on both sides.
  3. Transfer the seared chicken thighs to the preheated oven and bake for 25-30 minutes until fully cooked.
  4. Boil chopped potatoes in salted water for about 15-20 minutes until tender. Drain and mash with butter, milk, salt, and pepper.
  5. Cook sliced carrots with honey and brown sugar until glazed and sweet.
