A comforting and flavorful pasta dish with creamy Pepper Jack cheese and zesty Cajun sausage, perfect for busy weeknights.

Ingredients

  • 1 lb Cajun-style sausage, sliced
  • 12 oz pasta (penne or rotini)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded Pepper Jack cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced Cajun sausage, bell peppers, onions, and minced garlic to the skillet. Cook until the sausage is browned and the veggies are tender.
  3. Stir in the chicken broth, heavy cream, and Cajun seasoning. Bring to a simmer.
  4. Add the uncooked pasta right to the skillet. Cook until al dente, stirring occasionally.
  5. Reduce the heat and mix in the shredded Pepper Jack cheese until melted and creamy.
  6. Taste and adjust seasoning with salt and pepper as needed before serving.

Notes

Pairs well with a green salad and garlic bread. Store leftovers in an airtight container in the refrigerator for up to 3 days.
