Ingredients

Scale
  • 8 oz fettuccine pasta
  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded pepper jack cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Fettuccine: Bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente, following package instructions. Drain and set aside while you create your sauce.
  2. Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon. Cook until browned and fully cooked through, about 5-7 minutes.
  3. Add Garlic: Stir in the minced garlic and sauté for another minute until fragrant.
  4. Make the Creamy Sauce: Pour in the heavy cream and bring to a simmer. Reduce heat and stir in the shredded pepper jack and grated Parmesan cheese until melted and smooth.
  5. Season and Combine: Season with salt and pepper to taste, then add the cooked fettuccine, tossing until coated in the sauce.
  6. Serve with Style: Serve immediately, garnished with fresh parsley.
