A delightful and creamy pasta dish featuring flaky salmon and vibrant spinach, perfect for a weeknight dinner.

  • 8 oz pasta (linguine or fettuccine)
  • 1 tbsp olive oil
  • 2 fillets of salmon
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil, and cook the pasta according to the package instructions. Drain and set aside.
  2. Sauté the Salmon: In a large skillet, heat the olive oil over medium heat. Add the salmon fillets and cook for about 4-5 minutes on each side until golden and cooked through. Remove and let it cool before flaking.
  3. Aromatic Garlic Infusion: In that same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in the heavy cream, bringing it to a gentle simmer. Add Parmesan cheese and stir until it melts into the sauce.
  5. Add the cooked pasta, fresh spinach, and flaked salmon. Toss gently until the spinach wilts slightly.
  6. Season the dish with salt and pepper to taste. Serve hot with lemon wedges on the side.

Notes

Leftovers store beautifully in an airtight container in the fridge for up to 2 days. Reheat gently with a splash of cream or milk if needed.
