A rich, creamy pasta dish bursting with spicy buffalo flavor, perfect for busy weeknights and one-pot cooking.

  • 1 lb cooked chicken (shredded or diced)
  • 12 oz fettuccine or penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup buffalo sauce
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp cream cheese
  • Salt and pepper to taste

Instructions

  1. Heat the aromatics in a large deep pot, adding the cooked chicken and seasoning with garlic powder, salt, and pepper. Sauté for about 2–3 minutes.
  2. Pour in the chicken broth, heavy cream, and buffalo sauce. Stir these ingredients together.
  3. Toss in the uncooked fettuccine or penne, ensuring it’s submerged in the sauce.
  4. Bring the mixture to a gentle boil, then reduce the heat to low and simmer uncovered for 10–12 minutes.
  5. Remove from heat and stir in the grated Parmesan cheese, shredded mozzarella cheese, and cream cheese until melted.
  6. Garnish with freshly chopped green onions or parsley before serving.

Notes

You can use rotisserie chicken for quicker prep. Adjust the buffalo sauce to control the spice level.
