1 lb sirloin steak, cut into 1-inch cubes
1 tbsp olive oil
1 tbsp Cajun seasoning
1/2 tsp garlic powder
1/4 tsp smoked paprika
Salt and pepper, to taste
12 oz pasta (penne or rotini)
4 cups beef broth
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
2 tbsp butter
2 green onions, chopped
Instructions
Sear the steak: In a large skillet, heat the olive oil over medium-high heat. Season the steak cubes with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. When the oil is shimmering, add the steak to the skillet and sear for 3-4 minutes until browned on all sides. Remove the steak from the skillet and set it aside.
Pour in the beef broth and bring it to a rolling boil.
Stir in the pasta. Cook according to package instructions until al dente, about 8-10 minutes.
Reduce the heat to low. Stir in the heavy cream, cheddar cheese, and Parmesan until melted and creamy.
Return the seared steak to the skillet and mix with the creamy pasta. Add the butter and stir until melted.
Garnish with green onions and serve warm from the skillet.
