A classic dessert featuring a rich vanilla custard topped with a crispy caramelized sugar shell, perfect for any occasion.

Ingredients

  • 2 cups heavy cream
  • 1 vanilla bean or 1 teaspoon vanilla extract
  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar (for topping)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan over medium heat, warm the heavy cream and vanilla bean until it just begins to simmer. Remove from heat and let it cool slightly. If using a vanilla bean, remove it from the pot and scrape the seeds back into the cream.
  3. In a mixing bowl, vigorously whisk together the egg yolks and granulated sugar until the mixture is pale and creamy.
  4. Gradually incorporate the warm cream into the egg yolk mixture, whisking continuously until the two are well combined.
  5. Carefully pour the custard mixture into ramekins. Place the ramekins in a baking dish, and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  6. Bake in the preheated oven for about 30-35 minutes or until the custards are set but still slightly jiggly in the center.
  7. After baking, remove the ramekins from the water bath and allow them to cool down to room temperature. Once cooled, cover and refrigerate for at least 2 hours or overnight for the best results.
  8. When you’re ready to serve, sprinkle a thin layer of brown sugar on top of each custard. Use a kitchen torch to carefully caramelize the sugar until it becomes golden and crispy. Serve immediately and enjoy the show as your guests dig in!

Notes

Use a quality vanilla bean for the freshest flavor. Chill the crème brûlée for at least 2 hours for the best texture.
