A creamy cheesecake infused with rich crème brûlée flavors and topped with a satisfying crack of caramelized sugar.

Ingredients

  • 2 cups cream cheese
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1/4 cup heavy cream
  • 1/2 cup granulated sugar (for caramelizing)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Beat the cream cheese until smooth.
  3. Add in the sour cream, sugar, eggs, vanilla extract, and cornstarch; mix until well combined.
  4. Pour the mixture into a greased springform pan.
  5. Bake for about 50-60 minutes or until the center is set.
  6. Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight.
  7. Whip the heavy cream to soft peaks and spread it on top of the chilled cheesecake.
  8. Sprinkle sugar evenly on top and use a kitchen torch to caramelize it until golden.
  9. Let it cool slightly before slicing and serving.

Notes

Serve with fresh berries or a drizzle of raspberry sauce. Store leftovers in the refrigerator for up to 3 days or freeze without the caramelized sugar topping for up to 2 months.
