Delightfully soft cookies topped with a crispy caramelized sugar layer, mirroring the flavors of classic crème brûlée.

  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the softened unsalted butter, 1 cup granulated sugar, and 1/2 cup brown sugar until light and fluffy.
  3. Add the eggs, one at a time, and stir in 1 teaspoon vanilla extract.
  4. Whisk together 2 1/4 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt in a separate bowl.
  5. Combine the dry ingredients into the butter mixture, stirring until just mixed.
  6. Drop tablespoon-sized scoops of dough onto a lined baking sheet.
  7. Bake the cookies for 10-12 minutes until edges are golden brown.
  8. Cool slightly on the baking sheet before transferring to a wire rack.
  9. Add a tablespoon of heavy cream and a sprinkle of granulated sugar on each cookie.
  10. Caramelize the sugar using a kitchen torch until golden and crisp.
  11. Let cool completely before serving.

Notes

For best results, ensure the butter is at room temperature and cool the cookies slightly before caramelizing the sugar.
