Enjoy these Crispy Chicken Burritos filled with shredded chicken, rice, black beans, and cheese, all wrapped in a golden, crispy tortilla and served with guacamole and pico de gallo.

  • 2 cups cooked chicken, shredded
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas
  • 1 cup guacamole
  • 1 cup pico de gallo
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional: sour cream, jalapeños, or hot sauce

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the shredded chicken, cooked rice, black beans, shredded cheese, salt, and pepper in a large mixing bowl.
  3. Prepare a flour tortilla and place it flat on a clean surface.
  4. Spoon a generous portion of the chicken mixture into the center of the tortilla.
  5. Fold the sides of the tortilla over the filling and roll it up tightly from the bottom to the top.
  6. Brush the outside of the burrito with olive oil.
  7. Place the burrito seam side down on a baking sheet.
  8. Bake for 15-20 minutes until golden brown and crispy.
  9. Serve warm with sides of guacamole and pico de gallo.
