A delightful breakfast dish featuring crispy feta paired with a perfectly runny egg, complemented by creamy avocado and zesty red pepper flakes.

Ingredients

  • 1 large egg
  • ¾ oz / 20g feta cheese
  • 1 small tortilla or slice of toasted bread
  • ¼ avocado
  • Dried oregano
  • Red pepper flakes
  • Cooking oil spray or olive oil spray
  • Lemon juice
  • Pickled onions (for garnish)
  • Chili oil (for garnish)

Instructions

  1. In a small fry pan or skillet, add a spray of cooking oil and crumble over the feta cheese, ensuring the outside circle of the pan is also covered. Allow the feta cheese to sizzle and sauté over medium heat for a couple of minutes so the cheese can melt without burning.
  2. Gently crack the egg in the center of the pan, ensuring the yolk remains intact.
  3. Season the egg with a sprinkle of dried oregano and red pepper flakes, and allow the egg to cook to your liking—whether you prefer a medium yolk or one that’s wonderfully runny.
  4. Warm the tortilla on a gas stove, in the oven, or in the microwave until it’s pliable and just slightly toasted.
  5. While your egg is cooking, smash the avocado in a bowl and add a squeeze of lemon juice to keep it fresh and zesty.
  6. When the egg is cooked and the cheese has created a golden brown crust, gently remove it from the pan using a spatula. Place it on the warmed tortilla or toast, topping it with the smooth avocado.
  7. Finally, finish your masterpiece with garnishes of pickled onions and a drizzle of chili oil, adding that extra layer of flavor and visual appeal.

Notes

Keep an eye on the feta while it sizzles; you want it golden without burning. Experiment with flavors by adding herbs or spices you love.
