A delicious and nutritious recipe for veggie patties made with lentils and grated vegetables, perfect as a burger alternative.

  • 1 cup lentils
  • 1 carrot, grated
  • 1 onion, finely chopped
  • 1 potato, grated
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil (for frying)

Instructions

  1. Rinse and cook the lentils by rinsing them under cold water and cooking according to package instructions (about 20 minutes). Drain and set aside to cool.
  2. Combine the freshly cooked lentils with the grated carrot, chopped onion, and grated potato in a mixing bowl.
  3. Sprinkle in the salt, pepper, and garlic powder. Stir until everything is well combined.
  4. Take portions of the mixture and form them into small patties (about golf ball size).
  5. Heat the olive oil over medium heat in a frying pan until hot.
  6. Fry the patties in the hot oil for about 4-5 minutes on each side until golden brown and crispy.
  7. Serve warm as a burger alternative or in sandwiches. Enjoy!

Notes

For extra crispiness, coat the patties lightly in breadcrumbs before frying. Feel free to customize the flavors by adding herbs or spices.
