  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup milk
  • 4 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pound chicken breasts to an even thickness of about 1/2 inch.
  3. Mix together the Parmesan cheese, panko breadcrumbs, garlic powder, salt, and black pepper in a shallow dish.
  4. Place flour on a separate plate and whisk together eggs and milk in another shallow dish.
  5. Dredge each chicken breast in flour, shaking off the excess.
  6. Dip the floured chicken in the egg mixture, allowing the excess to drip off.
  7. Coat the chicken in the Parmesan breadcrumb mixture, pressing gently to adhere.
  8. Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat and add the chicken, cooking until golden, about 3-4 minutes per side.
  9. Transfer the skillet to the preheated oven and bake for 15-20 minutes until cooked through.
  10. Prepare the garlic sauce while the chicken is baking by heating remaining olive oil in a small saucepan and adding minced garlic, sautéing until fragrant.
  11. Add chicken broth and bring to a simmer, then reduce heat to low, add heavy cream, and stir, letting it thicken slightly.
  12. Remove the chicken from the oven, pour the garlic sauce over, and sprinkle with parsley before serving.

Notes

For best results, pound the chicken evenly and consider adding herbs to the breadcrumb mixture.
