Delightful crispy fritters filled with sweet, juicy pineapple, perfect as a snack or dessert.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 large egg
  • 1/2 cup coconut milk
  • 2 cups pineapple, diced
  • 2 cups vegetable oil
  • 2 tablespoons powdered sugar

Instructions

  1. Whisk together dry ingredients in a medium bowl.
  2. Combine wet ingredients in a separate bowl.
  3. Pour the wet mixture into the dry ingredients and stir until smooth.
  4. Fold in diced pineapple gently into the batter.
  5. Heat vegetable oil in a deep skillet over medium heat.
  6. Drop portions of batter into the hot oil to fry.
  7. Transfer cooked fritters to a paper towel-lined plate and dust with powdered sugar.

Notes

Best enjoyed fresh; can be served with tropical fruit salad or vanilla ice cream.
