Delightfully crispy and tender squid rings coated in a flavorful batter, perfect as an appetizer or main dish.

Ingredients

  • 500 grams cleaned squid tubes, cut into rings
  • 1 cup all-purpose flour (can use gluten-free flour)
  • 1/2 cup corn starch
  • 1 teaspoon baking soda
  • 1 large egg white (optional for vegan version)
  • 1/2 cup water (adjust for batter consistency)
  • 1 pinch salt
  • 2 cups oil (high smoke point oil for frying)
  • 2 tablespoons oil (for stir-frying)
  • 2 tablespoons chopped scallions (can use green onions)
  • 1 tablespoon chopped red chilies (adjust for heat preference)
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon ground white pepper (or black pepper)

Instructions

  1. Rinse and dry the squid by patting them with paper towels.
  2. In a mixing bowl, combine flour, corn starch, baking soda, egg white (if using), water, and salt.
  3. Dip the squid rings into the batter until completely coated.
  4. Pour 2 cups of oil into a wok or deep frying pan and heat to 350°F (175°C).
  5. Carefully add squid rings in small batches for frying for 2 to 3 minutes.
  6. Remove the fried squid with a slotted spoon and drain on paper towels.
  7. Heat 2 tablespoons of oil in a separate skillet and stir-fry scallions and red chilies.
  8. Add the fried squid to the skillet and season with salt and ground white pepper.
  9. Transfer the squid to a serving plate and enjoy immediately.

Notes

For extra flavor, experiment with spices in the batter. Store leftovers in an airtight container for up to 2 days.
