A rich and flavorful creamy pasta dish with tender chicken, Cajun seasoning, and a luscious sauce, perfect for cozy family dinners.

  • 1 pound chicken breasts
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup chicken broth
  • 8 ounces pasta (penne or rotini)
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh parsley, chopped for garnish

Instructions

  1. Season the chicken breasts generously with Cajun seasoning. In a skillet, heat the olive oil over medium heat. Add the chicken breasts and brown them on both sides until golden (about 3-4 minutes per side).
  2. Layer the browned chicken in your Crock Pot. Add in the diced onions, minced garlic, and bell peppers. Pour in the cream of chicken soup and chicken broth.
  3. Cover and set your Crock Pot to low. Cook for 4-6 hours, or until the chicken is cooked through and tender enough to shred.
  4. Remove the chicken breasts from the pot and shred using two forks. Return the shredded chicken back into the pot, mixing it with the flavorful broth and veggies.
  5. Stir in the pasta and pour in the heavy cream. Increase the heat to high and cover, cooking for an additional 30 minutes.
  6. Taste and adjust the seasoning with salt and pepper as needed. Serve topped with grated Parmesan cheese and fresh parsley.

Notes

For best results, brown the chicken to enhance flavor. Feel free to swap the pasta type for your preference.
