A comforting Italian-inspired dish with tender chicken in a rich, creamy sauce, perfect for busy weeknights or gatherings.

  • 4 boneless, skinless chicken breasts
  • 1 packet of Italian dressing mix
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup of cream cheese
  • 1 cup of chicken broth
  • 1/2 cup of shredded mozzarella cheese
  • 1/2 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare the Chicken: Place the chicken breasts in the crockpot. Make sure they’re arranged evenly to cook perfectly.
  2. Whisk Together the Sauce: In a bowl, mix the Italian dressing mix, cream of chicken soup, cream cheese, and chicken broth until smooth.
  3. Combine the Ingredients: Pour the creamy mixture over the chicken, ensuring each piece is covered.
  4. Slow Cook to Perfection: Cook on low for 360 minutes (6 hours) or high for 240 minutes (4 hours) until the chicken is cooked through.
  5. Add the Cheeses: About 30 minutes before serving, stir in the mozzarella and Parmesan cheese, and season with salt and pepper.
  6. Serve and Garnish: Serve with rice or pasta and garnish with fresh parsley.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently adding a splash of chicken broth if necessary.
