Hearty and comforting sandwiches featuring tender beef, savory onions, and rich au jus, perfect for busy nights or gatherings.

Ingredients

  • 2 lbs beef chuck roast
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • French rolls or baguettes
  • Provolone or Swiss cheese (optional)
  • Salt to taste

Instructions

  1. Place sliced onion and minced garlic at the bottom of the slow cooker.
  2. Season the beef roast with salt and pepper and place it on top of the onions.
  3. Mix beef broth, water, Worcestershire sauce, thyme, and additional salt in a bowl. Pour this mixture over the roast.
  4. Cover and cook on low for 8-10 hours, or until the roast is tender.
  5. Remove the roast from the slow cooker and shred it with two forks.
  6. Strain the broth and serve it as au jus.
  7. Slice the French rolls, fill them with the shredded beef, and top with cheese, if desired.
  8. Serve with a cup of the au jus for dipping.

Notes

For best flavor, marinate the beef overnight. Feel free to add your favorite vegetables for extra nutrition.
