  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup water
  • 2 chicken breasts, diced
  • 2 tablespoons oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine the rice, coconut milk, and water, and bring to a boil. Season with a pinch of salt.
  2. Reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  3. Heat the oil in a skillet over medium heat. Add the minced garlic and ginger, sautéing for 1-2 minutes until fragrant.
  4. Add the diced chicken to the skillet and season with salt and pepper. Cook until the chicken is golden and thoroughly cooked through, about 6-8 minutes.
  5. Fluff the rice with a fork, then serve the creamy coconut rice topped with the sautéed chicken. Garnish with fresh cilantro.

Notes

Rinse the rice for fluffy grains. You can substitute chicken with tofu or chickpeas for a vegetarian option.
