A modern take on a classic family recipe, these stuffed zucchini boats are filled with a savory ground beef mixture and topped with melted cheese.

Ingredients

  • 4 large Zucchini
  • 1 lb Ground beef
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Tomato sauce
  • 1 cup Cheese, shredded (your choice)
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the insides.
  3. Heat olive oil over medium heat and sauté onion and garlic until fragrant.
  4. Add the ground beef and cook until browned; mix in tomato sauce, salt, and pepper.
  5. Fill each zucchini half with the beef mixture and top with cheese.
  6. Bake for 25-30 minutes or until zucchini is tender and cheese is melted.

Notes

For a vegetarian option, substitute ground beef with quinoa or lentils. Leftovers can be stored in the fridge for up to 3 days.
