A comforting dish featuring savory ground beef and gooey melted cheese stuffed into tender zucchini, perfect for a weeknight dinner.

  • 4 medium zucchinis
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the center with a spoon, creating hollow “boats.”
  3. In a skillet, heat olive oil over medium heat and sauté onion and garlic until soft and fragrant, about 3-4 minutes.
  4. Add ground beef to the skillet, cooking until browned. Be sure to drain excess fat to keep the filling light and wholesome.
  5. Stir in the marinara sauce, adding salt and pepper to taste, blending the flavors beautifully.
  6. Carefully fill the zucchini halves with the beef mixture, making sure to pack them generously.
  7. Sprinkle shredded mozzarella cheese over the filled zucchini boats for a gooey finish.
  8. Place the stuffed zucchini in a baking dish, cover with foil, and bake for 20 minutes to allow the flavors to meld.
  9. Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly—just irresistible!
