Easy Mediterranean Quesadilla

A quick and delicious quesadilla filled with Mediterranean flavors, featuring cheese, veggies, and optional chicken or chickpeas.

Ingredients

  • 4 flour tortillas
  • 1 cup shredded cheese (mozzarella or feta)
  • 1 cup cooked chicken or chickpeas (optional)
  • 1/2 cup chopped spinach
  • 1/2 cup chopped bell peppers
  • 1/4 cup olives, sliced
  • 1/4 cup sun-dried tomatoes, chopped
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and add a drizzle of olive oil.
  2. Place one tortilla in the skillet and sprinkle half of the cheese evenly on top.
  3. Add chopped spinach, bell peppers, olives, sun-dried tomatoes, and any optional cooked chicken or chickpeas on top of the cheese.
  4. Top with more cheese and another tortilla.
  5. Cook for about 3-4 minutes until the bottom is golden brown, then carefully flip and cook for an additional 3-4 minutes until the other side is golden and the cheese has melted.
  6. Repeat the process for remaining tortillas.
  7. Slice into wedges and serve warm.

Notes

For a refreshing side, pair with a simple salad or tzatziki dip. Leftovers can be stored in the refrigerator for up to three days.
