A warm and indulgent sticky toffee pudding that combines a moist sponge with a rich toffee sauce, perfect for cozy gatherings.

Ingredients

  • 200g pitted dates, chopped
  • 300ml boiling water
  • 1 tsp baking soda
  • 100g unsalted butter, softened
  • 150g brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 200g all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • For the toffee sauce:
  • 150g brown sugar
  • 100g unsalted butter
  • 200ml heavy cream

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a baking dish.
  2. In a bowl, mix the chopped dates and baking soda, then pour boiling water over it and let it sit for about 10 minutes.
  3. Cream the softened butter and brown sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Gradually mix in flour, baking powder, and salt.
  6. Fold in the softened date mixture.
  7. Pour the batter into the baking dish and bake for 30-35 minutes.
  8. While baking, prepare the toffee sauce by combining brown sugar, butter, and heavy cream in a saucepan and cook until thickened.
  9. Once the pudding is baked, poke holes in it and pour warm toffee sauce over the top.
  10. Serve warm with ice cream or whipped cream.

Notes

Ensure dates are soft for easier blending. Can substitute heavy cream with half-and-half, though the sauce will be less rich.
