A refreshing salad packed with protein from chickpeas and fresh veggies, tossed in a zesty dressing.

Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste
