  • 6 large eggs
  • 1/2 cup cooked bacon, chopped
  • Salt and pepper to taste
  • Optional: chopped herbs or vegetables (such as spinach, bell peppers, or chives)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the cottage cheese, eggs, chopped bacon, salt, and pepper in a mixing bowl; whisk until well mixed.
  3. Pour the mixture into a greased muffin tin, filling each cup about 3/4 full.
  4. Bake for 20-25 minutes or until the egg bites are set and lightly golden.
  5. Cool slightly before removing from the tin; serve warm or store for meal prep.

Notes

Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
