A comforting dish featuring crispy fried eggplants layered with gooey mozzarella and savory marinara sauce, perfect for family gatherings.

Ingredients

  • 2 large eggplants
  • 1 cup all-purpose flour
  • 3 large eggs
  • 2 cups breadcrumbs
  • 4 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Fresh basil leaves
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants into 1/4 inch thick rounds and sprinkle with salt. Let them sit for 30 minutes.
  3. Rinse the eggplant slices under cold water and pat dry.
  4. Create a breading station with flour, eggs, and breadcrumbs in separate shallow dishes.
  5. Dredge each eggplant slice in flour, dip in beaten eggs, and coat with breadcrumbs.
  6. Fry the breaded eggplant slices in olive oil until golden brown, about 3-4 minutes per side.
  7. Spread a layer of marinara sauce in a baking dish, then layer with fried eggplant slices and cheeses.
  8. Repeat the layering until all ingredients are used, finishing with marinara and cheese on top.
  9. Bake for 25-30 minutes until cheese is bubbly and golden.
  10. Garnish with fresh basil before serving.

Notes

Choose firm eggplants with shiny skin and don’t skip the salting step to reduce bitterness.
