A quick and comforting meal that combines savory meat, crunchy veggies, and umami-rich sauces.

Ingredients

  • 1 lb ground pork or chicken
  • 1 bag coleslaw mix
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • Salt and pepper to taste
  • Sesame oil (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. Brown the meat in a large skillet over medium heat, breaking it up with a spatula.
  2. Sauté the garlic and ginger until fragrant—about 1 minute.
  3. Wilt the coleslaw mix, cooking until wilted to meld the flavors together.
  4. Add the soy sauce and rice vinegar, seasoning with salt and pepper.
  5. Combine and cook until well combined and coleslaw is tender, stirring occasionally.
  6. Drizzle with sesame oil if desired for a rich flavor.
  7. Garnish with green onions and cilantro before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Freeze in portioned containers for up to 3 months.
