Delicious rolled tortillas filled with scrambled eggs, savory sausage, and smoky bacon, smothered in enchilada sauce and melted cheese.

Ingredients

  • 4 large tortillas
  • 4 scrambled eggs
  • 4 strips of crispy bacon, chopped
  • 1 cup maple sausage, cooked and crumbled
  • 1 cup cheddar cheese, shredded
  • 1 cup enchilada sauce
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Scramble the eggs in a skillet over medium heat and season with salt and pepper to taste.
  3. Assemble the tortillas by layering scrambled eggs, bacon, sausage, and cheddar cheese in the center.
  4. Roll up the filled tortillas, tucking the ends in, and place them seam-side down in a baking dish.
  5. Repeat the rolling process until all tortillas are filled and placed in the baking dish.
  6. Pour enchilada sauce generously over the rolled tortillas.
  7. Top with remaining cheddar cheese.
  8. Bake in the preheated oven for about 20 minutes or until the cheese is bubbly and golden brown.
  9. Garnish with fresh cilantro and serve hot.

Notes

Can be prepared ahead of time and stored in the refrigerator before baking.
