A delightful twist on breakfast featuring crispy English muffins topped with rich sawmill gravy, fluffy scrambled eggs, hearty breakfast sausage, and gooey cheddar cheese.

Ingredients

  • 8 oz breakfast sausage
  • 1/4 cup sausage drippings (reserved from cooked sausage)
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • Salt, to taste
  • Black pepper, to taste
  • 4 English muffins, split
  • 4 large eggs
  • 1 dash milk (for scrambled eggs)
  • 1 cup mild cheddar cheese, shredded

Instructions

  1. Cook the breakfast sausage in a cast iron skillet over medium heat until browned. Remove and reserve drippings.
  2. Add the flour to the reserved drippings and cook until golden. Gradually whisk in milk and season with salt and pepper to make the gravy.
  3. Toast the English muffins until golden.
  4. Whisk the eggs with a dash of milk and scramble until fully cooked.
  5. Preheat the broiler.
  6. Assemble the pizzas with gravy, eggs, sausage, and cheddar on the muffins.
  7. Broil for 2-4 minutes until cheese is melted and bubbly.

Notes

Keep a close eye on the broiler while cooking. Feel free to substitute the sausage for turkey or a meat alternative. Add vegetables for a twist.
