A comforting dish of baked eggs with creamy feta cheese, juicy tomatoes, and fresh spinach, perfect for any meal.

Ingredients

  • 200g Feta cheese
  • 4 Eggs
  • 2 cups Fresh spinach
  • 1 cup Cherry tomatoes
  • 2 tbsp Olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (optional, such as basil or parsley)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the feta cheese in the center of a baking dish.
  3. Arrange the cherry tomatoes and fresh spinach around the feta cheese.
  4. Drizzle with olive oil and season generously with salt and pepper.
  5. Make little wells in the vegetable mixture and crack an egg into each well.
  6. Bake for about 20-25 minutes, or until the eggs are set to your liking.
  7. Garnish with fresh herbs if desired, and serve warm to enjoy!

Notes

For a heartier meal, serve with crusty sourdough bread or a light arugula salad.
