  • 1 lb chicken breast, diced
  • 1/2 cup flour
  • 1/2 cup corn starch
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup rice, cooked
  • 1/2 cup green onions, chopped
  • 1/2 cup sweet chili sauce
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • 1/2 tsp red pepper flakes
  • Oil for frying

Instructions

  1. Prepare the coating: In a bowl, combine the flour, corn starch, salt, and black pepper. Coat the diced chicken thoroughly in this mixture.
  2. Fry the chicken: Heat oil in a pan over medium heat. Add the coated chicken and fry until golden brown, about 6-8 minutes. Remove and drain on paper towels.
  3. Stir-fry with flavor: In another pan, heat sesame oil. Add the chicken, green onions, sweet chili sauce, soy sauce, and red pepper flakes. Mix for 3-5 minutes.
  4. Serve and enjoy: Serve hot over a bed of cooked rice, garnished with additional green onions if desired.

Notes

For extra crunch, double coat the chicken by dipping it in egg before the flour mixture. Adjust red pepper flakes for desired heat level.
