Delightful muffins made with ripe bananas and creamy peanut butter, perfect for a healthy snack or breakfast.

Ingredients

  • 2 ripe bananas
  • 1 cup peanut butter
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: chocolate chips, nuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the bananas until smooth.
  3. Add in the peanut butter, eggs, honey (or maple syrup), baking soda, vanilla extract, and salt.
  4. Mix all the ingredients until fully combined.
  5. Fold in chocolate chips or nuts if desired.
  6. Spoon the batter into a muffin tin lined with cupcake liners.
  7. Bake for 15-20 minutes until a toothpick comes out clean.
  8. Let the muffins cool before transferring to a wire rack.

Notes

Serve with additional peanut butter or honey. Muffins freeze well for up to a month.
