These fluffy egg bites are light, airy, and bursting with flavor, making them a perfect start to your day or a quick snack.

Ingredients

  • 4 large eggs
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons chopped fresh chives
  • 1/4 cup diced bell pepper

Instructions

  1. Preheat the oven to 350°F (175°C) and coat a muffin tin with nonstick spray.
  2. Blend the eggs, cottage cheese, milk, salt, and pepper until smooth.
  3. Add the shredded cheddar cheese, chopped chives, and diced bell pepper to the mixture.
  4. Pour the egg mixture evenly into the muffin tin cups.
  5. Bake for 16-18 minutes, until puffed and set in the center.
  6. Cool slightly and run a knife around the edges to release the egg bites.
