Delicious and convenient freezer breakfast burritos that are perfect for busy mornings.

Ingredients

  • 8 large flour tortillas
  • 8 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers
  • 1 cup cooked and crumbled sausage or bacon
  • Salt and pepper to taste
  • Cooking spray or oil

Instructions

  1. Whisk together eggs and milk in a large bowl, seasoning with salt and pepper.
  2. Heat a skillet over medium heat and spray with cooking spray or oil.
  3. Pour in the egg mixture and scramble until fully cooked.
  4. Lay tortillas flat and layer with scrambled eggs, bell peppers, cheese, and crumbled sausage or bacon.
  5. Roll each tortilla tightly, tucking in the sides to create neat burritos.
  6. Place burritos seam-side down in a freezer-safe container.
  7. Microwave for 2-3 minutes to enjoy when ready.

Notes

Don’t overfill the burritos to prevent bursting. Allow the filling to cool slightly before rolling. Wrap in a damp paper towel for even heating when microwaving.
