Delicate and colorful French macarons with almond flour and a chewy center, perfect for any occasion.

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • Food coloring (optional)

Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Sift together the almond flour and powdered sugar in a bowl.
  3. Whisk the egg whites in a separate bowl until foamy, then gradually add the granulated sugar and whisk until stiff peaks form.
  4. Fold the dry ingredients into the meringue mixture gently.
  5. Add food coloring if desired and mix gently to distribute the color.
  6. Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheets.
  7. Let the piped macarons sit at room temperature for 30-60 minutes until a skin forms.
  8. Bake in the preheated oven for 15-20 minutes or until easily lifted from the parchment.
  9. Cool the macarons completely before removing them from the baking sheets.
  10. Fill the cooled macarons with your favorite filling and sandwich them together.

Notes

Ensure mixing bowls are free of oils for proper egg white whipping. Consider aging egg whites for better meringue.
