A comforting dish combining tender chicken, creamy orzo, and sweet caramelized onions, reminiscent of French onion soup.

  • 1 pound chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups beef broth
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) to prepare for baking.
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the sliced onions and cook them slowly until caramelized, about 15 minutes.
  3. Once the onions are caramelized, add the diced chicken to the skillet and sauté until no longer pink.
  4. Now stir in the orzo, beef broth, thyme, salt, and pepper. Bring to a boil.
  5. Reduce the heat and let simmer for about 10 minutes until the orzo is cooked al dente.
  6. Sprinkle the mozzarella cheese generously on top.
  7. Transfer the skillet into the preheated oven and bake for 10-15 minutes until the cheese is bubbly and golden.
  8. Once done, cool slightly and garnish with fresh parsley before serving.

Notes

For extra flavor, be patient while caramelizing the onions. Feel free to substitute chicken with mushrooms for a vegetarian option.
