A comforting French toast casserole that’s perfect for brunch, combining fluffy bread soaked in a sweet custard with warm cinnamon and vanilla.

  • 1 loaf of bread (challah or brioche recommended)
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Toppings: maple syrup, powdered sugar, fresh fruit (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut the bread into cubes and place them in a greased baking dish.
  3. Whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt until well combined.
  4. Pour the egg mixture over the bread cubes, ensuring all pieces are soaked.
  5. Cover the dish with foil and let it sit for at least 30 minutes or overnight in the fridge.
  6. Bake for 30 minutes covered with foil, then remove the foil and bake for an additional 15-20 minutes.
  7. Serve warm with maple syrup, powdered sugar, or fresh fruit.

Notes

For added convenience, prepare the casserole the night before and let it soak overnight. Don’t skip the resting time to avoid soggy bread.
