A warm and comforting French toast casserole that’s perfect for brunch, filled with sweet brioche, eggs, and cinnamon.

  • 1 loaf of bread (preferably brioche or challah)
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Butter for greasing the pan
  • Maple syrup and powdered sugar for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter.
  2. Cube the bread and place it evenly in the greased baking dish.
  3. Whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt in a large bowl. Pour over the bread cubes.
  4. Chill for about 30 minutes or refrigerate overnight.
  5. Bake for about 40-45 minutes, until golden and a knife comes out clean.
  6. Serve warm with maple syrup and powdered sugar if desired.

Notes

For extra flavor, you can add fruits like blueberries or chocolate chips. Use day-old bread for better absorption of the custard.
