  • 1/2 cup milk
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. Combine the dry ingredients: In a large bowl, mix together the flour, sugar, baking powder, and salt.
  2. Whisk the wet ingredients: In another bowl, whisk together the milk, eggs, and vanilla extract until smooth and fully combined.
  3. Mix the batter: Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix; a few lumps are perfectly fine!
  4. Heat the oil: In a deep frying pan or pot, heat vegetable oil to 350°F (175°C).
  5. Fry your beignets: Using a spoon, drop tablespoons of the batter into the hot oil, frying until golden brown, about 2-3 minutes on both sides.
  6. Drain the beignets: Remove the beignets and let them drain on paper towels to absorb excess oil.
  7. Add the final touch: Dust the warm beignets with powdered sugar before serving.

Notes

Best enjoyed fresh; store in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
