Colorful and healthy tortilla roll-ups filled with fresh vegetables and cream cheese, perfect for appetizers or snacks.

  • 4 large flour tortillas
  • 1 cup cream cheese (or a dairy-free alternative)
  • 1 cucumber, thinly sliced
  • 1 bell pepper (red, yellow, or orange), thinly sliced
  • 1 cup shredded carrots
  • 1 cup fresh spinach leaves
  • 1 avocado, thinly sliced
  • Salt & pepper to taste
  • Optional: Fresh herbs like dill or cilantro for added flavor

Instructions

  1. Prepare the Veggies: Start by washing and slicing your vegetables. Cut cucumber, bell pepper, and avocado into thin strips.
  2. Spread the Cream Cheese: Lay tortillas on a flat surface and evenly spread cream cheese over each.
  3. Layer the Fresh Vegetables: Place sliced vegetables evenly down the center of each tortilla.
  4. Season to Taste: Sprinkle salt, pepper, and chopped herbs over the vegetables.
  5. Roll it Up: Starting from one end, roll the tortilla tightly around the veggies.
  6. Slice & Serve: Cut the roll into bite-sized pieces and arrange on a platter.

Notes

These roll-ups can be made a few hours in advance. Store leftovers in an airtight container in the fridge for up to 2 days.
